Preheat the oven to 350 F. Cut the peeled coconut meat into thin strips with a sharp paring knife. Spread the coconut strips in a single layer on a baking sheet and toast in the oven for 15 to 20 minutes, until golden. If the coconut has been dried already, reduce toasting time to 5 to 7 minutes.
