- 8 oz pasta (elbows, shells, twists, etc.)
- 1 small onion, chopped
- 16 oz cottage cheese

- 3 - 4 Tablespoons salsa
- 2 cans (6 oz) Albacore tuna, drained
- 12 saltine crackers, crumbled

Preheat oven to 350 degrees. Cook pasta in salted boiling water until tender. Add chopped onion for last two minutes of cooking to soften slightly. Drain.
Meanwhile, combine cottage cheese, sour cream, chiles, and salsa in a large bowl until well blended. Add cooked pasta and stir. Break tuna into bowl and stir again.
Turn mixture into a greased 2-quart casserole dish. Combine crackers and cashews and sprinkle over top. Bake uncovered for 20 - 30 minutes, or until hot and bubbling.
