Diabetic Low Fat Black Bean Relish (high fiber)
Ingredients:

  • 1 15 oz. can black beans, rinsed and drained
  • 1 medium tomato, finely chopped
  • 1/2 cup chopped red pepper
  • 1/4 cup chopped red onion
  • 4 oz. can or jar, chopped green chilies
  • 2 tablespoon vinegar
  • 1 tsp. balsamic vinegar
  • 1/4 tsp. salt

Directions:

Combine all ingredients in a medium bowl; stir to blend. Cover and refrigerate until chilled, about 1 hour.

Makes 8 servings.

NOTE:
Great with grilled meats or grilled fish.

Exhanges 1 bread/starch 1/2 veggie.
Calories 62 Fat 1 g Fiber 6 g.
