Wild Duck with Piquant Sauce
Ingredients:

  • 4 medium onions, halved
  • 1/3 # pitted prunes
  • 3/4 cup raisins
  • 1 Tbl. sage
  • 2 Tbl. sugar
  • 1/4 tsp ginger
  • 1/4 tsp nutmeg
  • 1/2 tsp cinnamon
  • 1/4 tsp cloves
  • 1/2 tsp ground black pepper
  • 1/2 cup wine vinegar
  • 3 cups red wine
  • 1-1/2 cups cooked lean ham, finely chopped
  • 2 wild ducks

Directions:

In a casserole place the ducks, onions and prunes. Mix wine and vinegar with all the spice and raisins. Pour over the ducks. Cover with a lid and cook at 375 for 1 and a quarter hours. Serve half a duck per guest.
