Place fish fillets on a rack in broiler pan. Mix butter, cilantro, salt and garlic in small cup or bowl. Brush half of butter mix onto top sides of fish. Set oven to broil or very high heat. Broil fish about 4 inches from heat source for about 5 minutes, until lightly cooked. Take pan with fish out and flip over fillets. Brush remaining butter onto fillets. Broil another 4 minutes or until flakes easily with fork. Serve with Garlic Salsa.

Garlic Salsa:

  • 3 cloves garlic, crushed
  • 2 med. tomatoes, finely chopped
  • 1 medium onion, chopped (1/2 cup)
  • 1 T. finely chopped cilantro or parseley (use flat-leaved)
  • 1 T. lemon juice
  • 1/2 t. dried oregano
  • 1 1/2 t. vegetable or olive oil
Heat all ingredients over medium heat, stirring occasionally, until very hot and bubbly. This dish is excellent and simple to make.
