Directions:
In a sauce pan bring water and 3/4 tsp salt to a boil. Add grits slowly, whisking. Reduce heat, simmer, stirring grits frequently till thick. Remove sauce pan from heat and stir in cheese. Meanwhile, in a skillet, heat oil on moderately low heat.
Add sausages and cook till done. Remove sausages from pan. Add tomatoes, the remaining 1/4 tsp salt and pepper to pan. Cook until tomatoes are thoroughly heated. Stir in parsley. Serve grits topped with sausages and tomato sauce.
