Directions:
Cook rice and chill.
String snow peas and blanch in boiling salted water for 15 secs., then put in ice water.
Dressing:
Combine lemongrass, ginger and vinegar, then add oil slowly while whisking. Add cilantro.
Toss rice mixture with peppers. diced turkey and dressing. Line a plate with lettuce leaves and mound mixture on top.
Garnish around base of salad with snow peas and enoki mushrooms. Sprinkle top with green onions.
