Ingredients:
- 1 large chicken, quartered and (if desired) skinned.
- 1 large sweet red bell pepper, seeded and julienned.
- 1 medium onion, halved and thinly sliced.
- 2 TB olive oil
- "Italian" seasoning (a mixture of dried herbs available from most spice vendors)
- Salt, pepper

Directions:
Wash the chicken and arrange it in one layer in a baking dish that is just large enough to hold it. Sprinkle with 1/2 tsp salt and pepper to taste. Mix onions and sweet pepper and arrange over the chicken. Sprinkle with 1 tsp of Italian seasoning and drizzle with the olive oil. Cover and bake at 375 degrees for 40 minutes.
