Directions:
Boil pork 5 minutes to get rid of salt. Put pork in second water (hot) and add beans, water, should be one half inch above beans. Add immediately, bell pepper, onion, celery, garlic, Italian seasoning and hot pepper. Cook slowly two to three hours, until gravy is thick and beans tender( I stir occasionally and smash beans with the back of spoon, it makes creamier and tender beans). Just before serving add a dash more of Italian seasoning . Salt to taste and serve over rice.
