Ingredients:
- 1 1/4 poundsturkey thigh
- 2 cups onions, cut into strips
- 2 green peppers, cut in strips
- 1 red bell pepper, cut in strip
- 2 tomatoes; peeled, diced
- 1 cup water
- salt & pepper to taste

Directions:
Combine all ingredients in heavy skillet. Simmer, covered, 35 minutes or until meat is tender. Uncover and continue to simmer until sauce is thick. Serve over noodles or rice. Serves 4.
